Ariana volunteered to try out a recipe for Erin's website and take a picture, and here is the result. I think they look yummy! The recipe is adapted from Rodale's Garden-Fresh Cooking. Here it is...
Carrot Macaroons
(Makes about 1 dozen)
1 c. ground almonds
1/2 tsp. finely grated orange peel
1 Tbs. unsweetened flaked coconut
1 egg white, room temperature
4 Tbs. honey, warmed
1/2 tsp. vanilla extract (vanilla and alcohol only)
1/4 tsp. almond extract (alcohol and almond oil only)
1/2 c. grated carrots
Combine almonds, orange peel and coconut in a medium-size bowl.
In a small bowl, beat egg white until soft peaks form. Gradually beat in honey. Fold into almond mixture. Stir in extracts and carrots. Refrigerate dough for 1 hour. Drop by teaspoonfuls onto a baking sheet that has been lined with parchment paper.
Bake in a preheated 300 degree oven for 15-20 minutes, or until golden but not brown. Lift paper off baking sheet and let cookies cool for 5 minutes. then transfer cookies to a wire rack and let cool completely. Store in a tightly covered container.
