Mom's Cabbage Soup :-)

Since I don't have to go back to work until next Tuesday, I'm having fun doing some other things that I'd like to do or need to do. Yesterday I went over to Mom and Dad's to take pictures of her making a diet legal soup that we're going to use in the magazine, probably in July/August. Erin is going to interview her and write an article about hospitality and how it relates to being sensitive to people's needs. Mom is so good at whipping up food that Erin can eat! The soup is delicious... somehow the combination of these humble ingredients makes a meal that is greater than the sum of its parts! Maybe you'd like to try it:

Grandma's Cabbage Soup

Saute together until onion is limp:
2 Tbs. real butter
1 large onion, chopped

Place in a soup pan and add:
1 c. thinly sliced celery and leaves (about 2 ribs)
4 c. finely shredded green cabbage
2 large carrots, shredded
1 46 oz. can of tomato juice
salt and pepper to taste

Bring to a boil and simmer covered for 45 minutes. Uncover and continue simmering for 15 more minutes. Serve garnished with plain yogurt or sour cream.

I thought I'd also get a few more pictures while I was there. Look at all those tangerines!

I love this post! The soup looks good, and the pictures of gma and gpa are sooo great. (c: Speaking of scd soups, I made some lentils tonight which were pretty good. I'm fairly certain it'd qualify, but.. it didn't LOOK very attractive.

Yummy! That soup sounds good. I love seeing Gma and Gpa in their natural habitat!
